Service Description

Cooking in France with Eva Zwalm. Former art director, today food stylist and chef. Swedish chef, living in France (Burgundy). Sign up for this class to learn from the lovely Eva Zwalm, AIP on site chef 2019. Eva will guide you through her kitchen techniques. Prepare with grocery lists sent to you, and work along side Eva, in five weeks of hour long lessons. Learn to make: Filled pastry 3 différents shillings for starter, oriental oven chicken with "citron confit" and couscous for main course and fruit tart with almond crème for dessert. This online course will be live, and totally immersive. Eva is a wonderful person and teacher, and we are so excited to continue working with her! Here are the dishes that I will cook for our cooking session online on zoom . Starter: Filled puff pastry with two fillings : Apples and goat cheese/walnuts or lardons and goat cheese 6 p 2 puff pastry 300 gm of pardons 2-3 apples 200 gr of goat cheese 2 eggs 1 small jar of cream cheese Butter S&P Cinnamon 2 Egg yolks Walnuts Thym Wax paper Main course :Oven grilled Moroccan chicken legs with preserved lemon and olives 6 p 6 chicken legs é red onions fresh herbes Coriander and parsley black or green olives chicken stock cubes spices : S&P, Curcuma, Paprika, Cumin, Garlic or « Raz el Hanouth » mix, preserved lemons Olive oil Marinate before ! Dessert : French fruit tart with almond cream Fruit available Peach, pear, apricots … fresh are best but if not possible in a jar 1 puff pastry 900 gr of fruits almond powder 100 gr white sugar 100 gr sour cream 100 gr flour 50 gr eggs 2 eventually a hint of alcohol like rhum or kirsch http://evabiencuisine.blogspot.com/
